Manchego cheese is the most important and well-known sheep’s milk cheese in Spain. It is a rich, creamy sheep's milk cheese that comes only from La Mancha SP. It is a semi-firm cheese that has a rich golden colour and a distinct nutty flavour, ranging from mild to sharp depending on how long you let it age (prior to get on your plate, a Manchego cheese has been aged for a minimum of two months). Best match with fruit pastes or used diced in your roquette and fig salad.
