Pyengana Clothbound Cheddar is produced in Tasmania by John Healey using the original method established by his great grandfather at the turn of the century. Pyengana has an open texture and can be crumbly curd structure. Being a handmade farmhouse cheese, variations in character will appear according to the season and conditions when the cheese was made. Matured to twelve months or more, this cheddar develops a very nutty and aged taste, that will satisfy all of you true cheddar lovers!
