Made in the spring when rich milk is in abundance, this cheddar uses a special blend of four cultures created exclusively by the King Island cheesemaking team. Drier style cheddar, it is stirred vigorously while being heated to reduce moisture. After one year the cheese is checked and the finest examples are set aside for another year's maturation. Its flavour is savoury, yet offers the suggestion of fruit. A fantastic mild cheddar from Australia.
