Roquefort is a popular French cheese, known as being the favorite of Emperor Charlemagne. It is very moist and breaks into little pieces easily. Roquefort Papillon is rich, creamy and sharp, tangy, salty in flavour. In the mouth, its unctuous and supple texture melts and leaves a powerful and lingering aftertaste. Aged for 5 months minimum, it smells as strong as it tastes. You can eat it spread on a slice of Sonoma Miche, or use it in salads and dressings.
